Ingredients
1 pound eggplant
4 T oil
3 cloves garlic
1.5 inches ginger
2 spring onions
4 ounces ground pork
2 T soy sauce
1 t vinegar
1/2 t sugar
1 t seasame oil
1/4 cup water or chicken stock

Prep
Slice eggplant into 1/2 centimeter slices.
Mince garlic and ginger.
Slice spring onion.

Cook
Heat 2 T oil in a wok.
Add eggplant and cook till soft.
Remove eggplant and add the rest of the oil.
Add garlic, ginger, and 1/2 the spring onion.
Fry for 30 seconds and add pork.
Break pork apart and cook till all of it hase changed color.
Add soy sauce, vinegar, and sugar.
Add the eggplant to meat.
Add the rest of the spring onion and water.
Cook 2 minutes and stir in sesame oil.
Serve hot on rice.
