Ingredients
2 1lb fish.
4 inches of ginger.
2 tablespoons of soy sauce.
1/4 teaspoons of white pepper.
4 spring onions.
3 cloves of garlic.
1 teaspoon of sugar.
1/2 teaspoon of salt.
1/2 of a lime.

Prep
Peel and mince garlic.
Peel and slice ginger into matchsticks.
If need be degut and descale the fish.
Cut spring onion into 5cm pieces.
Mix the salt sugar and white pepper together and rub half of the mixture on each fish.
Place 1 seasoned fish and half of the ginger, garlic and soy sauce in a pie plate.
Do the same to the other fish. Squirt half of the lime on each fish.

Cook
Heat water in a steamer till it boils. When hot add One pie plate and let the fish steam for about 8 minutes. 30 seconds before it is done add half the spring onion. When done cook other fish and serve hot with rice. Serves about 4.
