Grandma Kuehler's Christmas Cookies

(adapted from recipe adjusted by Beth Kuehler Winner)

  • 4 eggs
  • 1 cup molasses
  • 1 cup butter
  • 1 cup Crisco or Extra Virgin Coconut Oil(softened or melted)
  • 1 tablespoon ginger powder
  • 1 tsp nutmeg
  • 1 tablespoon cinnamon
  • 16 oz. pecan pieces
  • 8 oz walnut pieces
  • 1 cup chopped dates (rinse sugar off)
  • 1 cup applesauce
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup sour cream
  • 2 teaspoons soda
  • 1 teaspoon baking powder
  • 9 oz box white raisins or substitute with dried cranberries, currants, cherries or apricots
  • 9 oz box dark raisins
  • 7-9 cups flour (1/3 of the flour can be whole wheat)

Stir soda into sour cream (sour cream will expand.) Cream butter, shortening, molasses, and sugars. Add fruits and nuts. Now add flour mixed with soda and baking powder alternately with sour cream. Refrigerate overnight (or at least 6 hours) for ease of handling. On floured* surface, roll dough to 3/8 inch thickness and cut with cookie cutter. Bake in 350 degree oven for 12-14 minutes. Be careful not to overcook or they will be dry. You can freeze the dough to roll out at a later time.

  • Flour mixture should be 3/4 cup flour mixed with 3 tablespoons of sugar.
