Ingredients

3 Tbs Oil
4 cloves garlic
1 inch ginger
1 Medium Onion
1/2 lb meat (chicken, pork, beef)
2 Tbs cornstarch
1/4 tsp white pepper
3 Tbs fish sauce OR 4 Tbs soy sauce
4 cups green vegetables
1/2 cups frozen vegetables
5-6 cups cold cooked rice
4 spring onions
3 eggs

Prep
Slice onion thinly into half rings.
Mince the garlic and ginger.
Slice meat thinly and mix with the cornstarch and pepper.
Beat eggs.
Slice spring onion for garnish.

Cook
Heat oil in a wok.
When hot add garlic and ginger.
Fry for 30 seconds and add meat.
Cook meat till no longer pink on the outside.
Add the regular onion, and fry till translucent.
Add the frozen and green vegetables and one Tbs of fish sauce OR 2 Tbs of soy sauce.
Fry till the vegetables are thawed and wilted.
Add the rice and the rest of the fish sauce OR soy sauce.
Heat through and through.
Cook the eggs in omelet form and slice thinly.
When the rice is hot place it in a serving dish and garnish with the eggs and spring onion.
