Ingredients
2 medium onions
2 sticks of celery with leaves
6 cloves garlic
1 or 2 tbs extra virgin olive oil
1 Tbs oregano
1 tsp pepper
2 bay leaves
1/2 tsp fennel seed (optional)
1 (6 oz.) can tomato paste
1 (15 oz) cans tomato sauce
2 (15 oz.) can chopped tomatoes
2 lb. ground beef, Italian sausage or combination of these
2 cups minced parsley, basil or cilantro (optional)
2 cups sliced mushrooms (optional)
1 tsp sugar (optional)
salt to taste


Prep
Brown meat (or have assistant to brown meat while chef prepares sauce.)
Chop onion.
Chop celery.
Mince garlic.


Cook
Brown onion, garlic, and celery in olive oil until onion is clear.
Add spices, tomato paste, tomato sauce, canned tomatoes (with one can of water for each tomato product.)
Bring to a boil.
Simmer 25 minutes. (While the sauce is simmering begin water for noodles.)
Now add meat and simmer 15 more minutes.
Add mushrooms and parsley and simmer another 5-10 minutes.
Taste for seasoning. (Add sugar and maybe additional salt.)


Serve sauce over cooked spaghetti noodles.
