6 cloves garlic
2lbs pork belly
Five spice?
White pepper?
White onion cut in wedges
Apple Wedges
Salt to cover top generously
Score top of pork belly
Dry off with paper towel and rub five spice and white pepper on
Slit side one inch to insert garlic
Make bed of aluminum foil to fit pork belly and put sliced apple and onion in bottom
Put pork belly on top and cover with salt
Bake at 350 for 45-60 min till salt sticks together
Peel off salt
Bake in oven at 400 for 20-30 min till top is crispy
Slice in half inch strips then slice strips into cubes

Sauce
Serve with lime, soy sauce, fish sauce chili mixture.
3 parts lime, 2 parts soy sauce, 1 part fish sauce and chili to taste.
